- Observation (CORRECTED DURING INSPECTION): Ice scoop and a plastic cup was observed being stored directly in the bin of ice used for preparing beverages. Handle of the ice scoop was in direct contact with ice in the bin.
- Corrective Action(s): *Store ice scoops in a clean container outside of the ice bins to prevent contact between the handles of the scoops and the ice. Current practice poses a risk of contaminating the ice, which is considered to be a food item when used in beverages.

- Observation: Signet SK2 sanitizer dispenser is not drawing the chemical concentrate into the dispenser during use, resulting in the dispenser only dispensing water. Operator has decided to discontinue use of the Signet SK2 product and replace it by manually preparing chlorine bleach solutions for use on food contact surfaces and in the 3-compartment sink.
- Corrective Action(s): *Provided manual warewashing reference chart to indicate correct concentrations of chlorine bleach to mix with water to make foodgrade sanitizing solution.
- *Operator must obtain chlorine test papers to establish and maintain the correct concentration of sanitizing solutions for manual warewashing and surface sanitizing.
- *Monitor sanitizer solution concentrations daily through use of the chlorine test papers. Solution concentrations must be kept in the 100-200ppm range to effectively sanitize surfaces & equipment.

- *Contact a a service technician to inspect and re-calibrate the wall dispenser to ensure that it dispenses sanitizer solution between 200-400ppm quats.
