      • Observation: Two holes observed to the right of the storage room door (one outside of the storage room, one inside). Holes in the wall can allow for pest harborage.
      • Corrective Action(s): Repair/patch holes to prevent pest entry/harborage. Due: 1 week.

    • 301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation (CORRECTED DURING INSPECTION): Observed beat slicer with a blue powder reside where food would be placed for slicing. Bag containing metal scrub pads containing similar blue powder found next to/below the meat slicer.
      • Corrective Action(s): Ensure that chemicals are not stored on any of the food contact surfaces at any point in time to prevent cross contaminating food. Slicer taken apart and cleaned during inspection.

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: Observed two mouse droppings inside on bottom of a large dry storage container which also contained some closed bags of flour. Lid of large container was half missing not allowing it to be completely closed/sealed off from pests.
      • Corrective Action(s): Check bags of flour for signs of mouse getting into bag (torn/chewed packaging) and discard is any damage found.
      • Clean and sanitize flour container. Replace/repair lid so that it can seal the opening and prevent entry from pests.

      • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: Observed several mouse droppings throughout kitchen, many along back wall/floor joint where wall meets the floor in the dishwashing area. Also observed a large continuous gap between the metal wall cover and the floor. This could allow for pests to hide and/or breed. Pest control company is coming in regularly.
      • Corrective Action(s): Seal up the gap along the floor/wall joint behind the dishwashing area (and any other gaps observed) with a material that is durable and impervious to pests. Due: 2 weeks (Feb 28, 2023).
      • Also have pest control company come in and do an inspection specifically for identifying areas where pests may be getting into walls or moving through area and follow their recommendations for preventing pest entry/harborage.

      • Observation: Thermometer on double glass door fridge with drinks is not accurate (reading approx 12C when inside was approx 4C).
      • Corrective Action(s): Replace thermometer with a working one and add this cooler as well as white domestic fridge to temperature monitoring log.

      • Observation:
      • Plastic measuring cup, lids and food containers found to have cracks and chips in them. The cracks will allow bacteria to grow in it, and pieces of plastic could fall into food.
      • Corrective Action(s):
      • Throw away all damaged, cracked and/or chipped equipment, utensils, lids, and food containers. Purchase new items and ensure to inspect all items for damage on a regular basis.

      • Observation:
      • The wall under the 3-compartment dishwasher sink has water damage and the tile coving has fallen off. The wall is not sealed, durable or clenable.
      • Corrective Action(s):
      • Repair the wall so it is made of a material that is smooth, level, sealed, cleanable, durable and impervious to water. Install the tile coving back on the wall, to protect the wall from water damage.

      • Observation:
      • Observation #1: The light bulbs in the fume hood do not turn on/are burnt out. Adequate lighting is required for cooking and cleaning purposes.

      • Observation #2: One lighting fixture in the kitchen is missing its protective shield. In the case of bulb breakage, the shield prevents the glass shards from injuring someone, landing in food, etc.

      • 314 - Operator has not provided acceptable written sanitation procedures [s. 24]
      • Observation: No quats (sanitizer) test strips found on-site. Staff say that Ecolab is relied on to service the quats dispenser. Staff must test the concentration at the dispenser daily to ensure that the quats is 200 ppm. If the concentration is less than 200 ppm, the dispenser must be serviced.

      • Corrective Action(s): Obtain quats test strips. Test quats concentration at dispenser daily. Record.

      • Observation:
      • The exhaust hood filters have accummulated grease and dust on them. The grease and dust may fall into food. Ensure to schedule a company to come in this month to clean the exhaust canopy as the service sticker indicates it is due.
      • Corrective Action(s):
      • The exhaust hood filters require to be removed and cleaned. Add this item to your cleaning schedule so is cleaned on a routine basis, between the time it is done by a commercial company.

      • Observation:
      • Found cracked, chipped and damaged plastic food inserts/containers, lids and measuring cups. These damaged items are not cleanable as bacteria will hide in the cracks, and pieces of plastic could fall into food from chipped items.
      • Corrective Action(s):
      • Discard all cracked, chipped and damaged containers, equipment, utensils, & lids and purchase new items.

      • Observation:
      • The tiles along the top of the mop sink are falling off and unsealed. This surface is uneven, unsealed and not cleanable.
      • Corrective Action(s):
      • Repair the area so that the tiles are level, smooth, sealed, and cleanable.

      • Observation (CORRECTED DURING INSPECTION):
      • 1) Drain pipe for walk-in-cooler condenser is leaking. Water is damaging the walls and mop sink basin.
      • 2) Kick plate at base of gas stove is falling off. This is not safe and it is difficult to clean the floor underneath it.
      • 3) The spill tray (left side) below the gas burners has a large hole in it. Food debris and spills will accumulate below and it is difficult to clean.
      • 4) The mop sink basin has chipped and cracked ceramic tiles. The tiles are not cleanable and water damage is occurring to the mop sink structure.
      • Corrective Action(s):
      • 1) Repair or replace the leaking pipe and mop up any pooling water. During the inspection, the pipe was replaced and water no longer is leaking.
      • 2) Install a new bolt to secure the kick plate. During the inspection, the kick plate was secured.
      • 3) Discard the spill tray and order a new one. During the inspection, staff cleaned the right side spill tray and placed it in the left side side. The flat grill (right side) is not used and therefore the spill tray isn't needed on that side.
      • 4) Replace all damaged ceramic tiles with new ones and seal them, so the mop sink basin is sealed and cleanable. Repair any water damaged walls.
