      • - Regular pest control services are provided by a pest control company. Assistant Manager states that there has been more frequent services lately due to cockroach activity. Service reports dated May 2024 and June 2024 reviewed at time of inspection. Service reports show that cockroach activity appear to have lessened; however, premises is not yet completely pest free. Poor sanitation and sanitation recommendations have been noted on service reports.
      • **Follow all recommendations provided by your pest control service technician.
      • **A higher level of sanitation is required throughout the entire premises, especially in hard to reach areas to prevent potential pest attraction. Work on regularly cleaning high traffic/ high use areas that are prone to grease and/ or food debris accumulation (e.g. cooking line).
      • **Continue to monitor pest activity. Report new and/ or increased activity to your pest control company.

      • Observation: The handwashing sink by the dishwashing area was not functioning properly. A spout was removed from the sink.
      • Corrective Action(s): The manager had stated that they were in search of a replaceable part. Inform the Health Officer on timeline of the repair. Use the 2 compartment sink in the area temporariliy as a handwashing sink until the handwashing sink gets repaired. Given 1 week to correct the issue.

      • Observation (CORRECTED DURING INSPECTION): 3rd sink in 3 compartment sink is filled up with washed equipment & utensils without any sanitizer. Asked employee how warewashing is done and it was stated that equipment/utensils are rinsed with water after being soaked in the detergent solution. Sanitizing step is absent.
      • Corrective Action(s): All equipment was removed in the 3rd sink and it was filled up with 200ppm QUAT sanitizer at the time of inspection. Ensure to immerse every equipment/utensils in 200ppm QUAT solution after rinsing. Immerse for minimum of 1 minute and let air dry.

      • Corrective Action(s): 1. Ensure all dishes are dried properly on drying racks and not in 3 comp sink. Re-organize the dishpit area to accommodate the drying space required.
      • 2. Do not dry or store anything in the hand sink. Re-located dishes requiring drying.
      • 3. The grease trap is not a suitable surface to store clean dishware or equipment. Re-locate the storage of these equipment to a sanitary area away from possible contamination.
