      • Observations: Observed serving utensils (tongs) hanging off grill rack, front of grill covered in grease and other debris.
      • Health Rationale: Servicing utensils not maintained in a sanitary condition increases the risk of environmental contamination (grease splashing from floor) and potential foodbourne illness.
      • Corrective Actions:
      • Operator removed tongs and placed them in a clean metal container at the time of inspection. Ensure utensils are adequately cleaned and sanitized and maintained in a sanitary condition. Staff stated that tongs are cleaned and sanitized every 2-3 hours.

      • 1. Observed the back door leading to the shipping/receiving are open at the time of the inspection.
      • 2. Observed fries and other food below and behind the cooking line.

      • 1. Operator closed the door at the time of inspection. Ensure the door remains closed when not needed to prevent possible entrance of pests.
      • 2. Operator began cleaning food debris at the time of inspection. Ensure food debris is cleaned regularly to prevent potential attraction and harbourage of pests.
