- Observation (CORRECTED DURING INSPECTION): 14 small containers of corn were stored outside at room temperature. Staff stated that they store corn in cooler but sometimes it is still frozen so containers are left outside for few hours.
- Temperature of corn recorded at or below 4C at the time of inspection. Staff moved all the containers back into the cooler.
- Corrective Action(s): Please note that storing potentially hazardous food outside at room temperature is not an acceptable method for thawing. If food is left outside in danger zone (4C - 60C) for prolonged period of time, the food may get contaminated with bacterial growth and toxin production.
- Please follow your facility's approved food safety plan for thawing frozen potentially hazardous food.

- Observation (CORRECTED DURING INSPECTION): 3 green cutting boards were observed in the front area. The surface of these boards was uneven on both sides with multiple knife cuts and crevices that could not be adequately cleaned and sanitized. As a result, bacteria can harbour in these cracks which may cause potential food contamination during food processing/cutting.
- Corrective Action(s): DO NOT USE the 3 green cutting boards which are not in good working order.
- Manager stated the cutting boards are replaced regularly. Additional new cutting boards are available onsite for use.

- Observation: Low temp mechanical dishwasher was run at the time of inspection and 0ppm chlorine residual observed. Staff stated that dishwasher has leakage issue and technician has been called. In the mean time, 3 compartment dishwashing sink has been used for manual dishwashing. 200ppm QUATS available at the dispensing unit and only single use take out containers are being used.
- Corrective Action(s): Please repair the dishwasher and ensure that it can adequately wash and sanitize the dishes/food contact surfaces. Notify your district EHO once the dishwasher has been serviced.
