    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: The ventilation hoods above the stove were observed to have buildup of grease and filth. The buildup may detach/drip into the food being prepared on the stove. This may also be a fire hazard. Last servicing was completed in December 2020.
      • Corrective Action: Operator to contact the cleaning company to get the ventilation hood serviced.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Observed meat slicer was not cleaned and sanitized properly after the last use and it contained the meat residuals attached to it under the hard to clean surfaces. The meat residuals left on the slicer are exposed to room temperature which may lead to growth of pathogens and toxin formation and may cross contaminate the other food products when the slicer is reused.
      • Corrective Action: The operator was told to dissemble the meat slicer and clean and sanitize the equipment as per the manufacturer’s guidelines.
    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: Back door has a gap on the bottom and weather strip is missing that can allow mice and pests to enter. Mice can fit through gaps as small as a pencil tip. Public Health Significance - Mice feces can carry disease and contaminate food that can lead to foodborne illness.
      • Corrective Action: The operator must ensure back door is properly sealed to prevent entry of pests.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Accumulation of dirt was observed on the kitchen walls in the restaurant. This can affect sanitation and further contaminate food.
      • Corrective Action: Regularly clean all walls and floors to prevent build up of dirt and debris.Ensure the general facility is cleaned before the next follow-up visit.
