- Observation: (CORRECTED DURING INSPECTION) Bleach wiping solution was measured to be approximately 50 ppm at time of inspection. Chlorine sanitizer solution should be maintained at 100-200 ppm in order to achieve effective 5-log reduction of micro organisms that may contribute to foodborne illness.
- Corrective Action: Sanitizer solution replaced during inspection. Ensure that bleach sanitizer solution is maintained at 100-200 ppm chlorine.
- 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
- Observation: (CORRECTED DURING INSPECTION) Scoop for flour observed to be laying on the floor at time of inspection.
- Corrective Action: Scoop was immediately cleaned and sanitized during inspection. Ensure that scoops are stored in a manner as to prevent contamination.
- 311 - Premises not maintained as per approved plans [s. 6(1)(b)]
- Observation: Ice machine drainage tube was feeding directly into hand sink drain at time of inspection. Backflow siphonage from the hand sink drain may result in contamination of ice.
- Corrective Action: Find another solution for draining the water from the machine. If using a sink drain, there must be an air gap between the tube and the sink, or another method of disposing the water.
