      • Hot holding protein (meat and beans) products are between 40-50C. Employee indicated that products had just been cooked and hot holding but they didnt put the lid on. Employee was directed to reheat protein products to 74C and used thermometer to verify temperatures reach 75C (165F) Ensure all foods are meat products are cooked and/or reheated to 74C.

      • Strong grease/waste odours were noticed in the back kitchen, indicating that the grease trap required servicing.Aug 23, 2024: Strong waste odour was still noticed at the back kitchen area. The manager stated that the grease trap is damaged and requires a replacement/repairs. Please note that the presence of a very strong waste odour at the facility will not allow proper food handling. Repair or replace the grease trap.

      • Hot water tap for the hand wash station was in disrepair and required repair. Hand towel container was empty and an open spool of hand towel was stored on the shelf on the other side of the kitchen. Provide proper dispenser for the hand towels.
