   • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
     • At the time of the inspection the prep cooler measured 12 degrees Celsius internally, and 14 degrees Celsius on the external gauge. Inspector requested that all items be moved to the opposite cook line which temperature measured less than 4 degrees Celsius. Once items were moved and prep cooler was covered it was lowered back to 4 degrees Celsius. Inspector instructed that operators must ensure that all gaps are covered to ensure that refrigerator unit is able to maintain proper temperatures.
