- The prep insert cooler has been serviced although there are fluctuations in temperature with the temperature rising above 4 C occasionally. Some food items that would be considered high-risk or potentially hazardous such as cut vegetables (tomatoes) were moved from the cooler.No high-risk food items will be stored in this unit until the cooler is maintaining a temperature of 4 C.Jeremy spoke with maintenance about the work that has been done on the cooler and the plan going forward if the temperature can not be maintained at or below 4 C. A new cold storage unit will be purchased if needed.Please provide me with an update on what will be done by Oct 20.

- The freezer unit was observed to have a significant accumulation amount of ice buildup by the door, which can affect the unit's efficiency and overall functionality. - Please ensure to have the freezer unit be checked out and repaired.

- The prep insert cooler is still being serviced and repaired by maintenance. No food is being held in this cooler. Candace will let me know when it is working properly and maintaining 4 C or less.The upright cooler has been serviced. The temperature was found to be at 5.9 C. Please make further adjustment or service to ensure 4 C or less is maintained. This cooler is in use.

- Cold storage unit temperatures for 2 units in the Bistro were found to be above 4 C (insert cooler at 14 C and walk-in cooler at 8.7 C)All high risk foods were moved from the walk-in cooler to another cooler and the cooler will be checked and serviced as needed to acheive4 C.All food items from the insert cooler were removed and discarded and this cooler will be serviced as needed to ensure the temp is maintaining 4 C or less.Correct by Aug 4 2023
