      • Observation: Barrier between hand sink and prep table still not re-installed as requested from previous inspection.
      • Corrective Action(s): Install within the next month as requested. Good time to do it during renovation work.
      • Send pic when completed or within one month.

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Mould and bio-slimes noted along silicone lip at edge of triple sink. SInk has come away from the wall as well.
      • Corrective Action(s): Remove mouldy silicone and replace with fresh seal along this lip. Flashing may be needed to close gap.
      • Review progress in one month. Send pics of completed work as discussed.

      • Observation: Hard to reach areas or the pastry prep station observed with accumulations of food (i.e. uner work counters, by and around legs of equipment, around rodent traps etc.). EIther quality or frequency of cleaning an issue.
      • Corrective Action(s): Review cleaning practices with staff to ensure a better job is done to clean under equipment and along the back walls of work stations as discussed.
      • Violation Score: 3
      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Faucet at triple sinks still not fixed as noted from previous inspection.
      • Corrective Action(s): Fix faucet such that it can be used to fill third sink as designed.
      • This will be reviewed at follow up inspection noted on report.

      • Observation: Faucet at dish sink not working properly. Makes things difficult to control temperature of the outflowing water, and filling the third sink impossible if manual dishwashing is needed or required.
      • Corrective Action(s): Fix the faucet as discussed. Check at next scheduled inspection.

      • Observation: Observed a minor accumulation of food (pastry etc.) debris build up in front corner of bakery area at plywood ramp under shelving units.
      • Corrective Action(s): Make sure staff take the time to move shelves where needed, including rodent traps to ensure cleaning processes are complete.

      • Observation (CORRECTED DURING INSPECTION): Quats in two of three spray bottles measured 0 ppm. One spray bottle unlabelled. Main feed at dish sinks measured 200 to 400 ppm solution. Discussed with manager.
      • Corrective Action(s): Dumped and refilled the two spray bottles in question. Labelled with sharpie the unlabelled spray bottle.
      • **Properly label spray bottles AND implement measures to ensure spray bottles are changed regularly enough to ensure quats solution does not drop below 200 ppm
