    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: Ice machine around the outside edge of the top rubber gasket observed with a biomat formation. The lid, hinge, and inner face of the lid to the same ice machine also observed with either a dust build up or a mould build up.
      • Corrective Action(s): Clean the ice machine in the areas as noted above. Regular scheduled cleaning may require the emptying of the ice bin area, but at the least a system to protect the ice from contamination should be in place during the cleaning process.

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Most areas of the food premises are well maintained and clean, but there were a few areas in need of attention. These included:
      • - inner cavity of dishwasher (bioscale or grease build-up in hard to reach areas. Outer shell of dishwasher.
      • - tracking, especially the middle track to the storage shelves.
      • Corrective Action(s): Make sure staff do a good job of cleaning when cleaning the above (including the ice machine).

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Drip tray to Hot water tank in dish pit observed with build-up of a biomat and stagnant water.
      • Corrective Action(s): In an effort to control fruit/drain fly population through the summer period, target for cleaning this area and continue with the drains in drive thru area.

    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Fruit flies noted on walls and ceiling at service counter and beverage station. Area behind drink machines looked ok with minor food build up and minimal stagnant water. Possible breeding in floor drains and similar pipe network in area. Sticky fly traps noted in food prep area and postioned behind counter order display.
      • Corrective Action(s): Make sure staff perform daily chemical treatmenat to vertical pipe to try and break the breeding cycle of flies.
      • **Remove/relocate sticky trap at service counter to protect any pick up counter food from contamination. Recommend moving the other trap away from beverage station. May not be appropriate to locate these traps in food prep areas. I will follow up with you on this.

  4. Routine Inspection

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: The following areas were noted with accumulations of food debris to a point where corrective action is needed:
      • - Dishpit. Sinks and internal cavity of dishwasher observed with moderate amount of grease sludge build up.
      • - Dry storage on tracks. Tracks themselves observed with build up and a selection of dipping sauces containers crushed and oozing onto floor.
      • ** Silicone peeling away from wall along stainless steel seems behind dish sinks. Silicone missing (and gaps noted) around mop sink surround.
      • Corrective Action(s): Reset the dishpit to remove sludge/scale build up as discussed. Remove old silicone behind dish sinks, dry area and replace. Dry and add silicone to mop sink surround.
      • Make sure staff spend time cleaning the tracking as well as the floor in the area as discussed.
      • Violation Score: 3
  5. Follow-Up Inspection

    1 infraction

    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Fruit/drain fly issue persists in beverage area and handwash station of Drive Thru. Most flies observed flying around both drains behind machines, but also resting under handsink and along wall immediately above this station. Moderate volume of flies noted.
      • Manager stated that pest control visited and provided active fly population controls. Daily application of cleaning agents and hot water also underway. It is possible that one or several of the drain tubes may be environments the flies use to breed.
      • Corrective Action(s): Continue to target the floor drains and beverage drain lines on a daily basis (or more) to reduce availability to quality breeding environments. Look for opportunities to reduce the bio-organic build up in the drains, including alternate chemical additives if available.
      • Violation Score: 9
      • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: floor drains in drive thru beverage stations receive nutrient/sweet enriched liquids and are likely developing significant biomats or sludges in and along the walls of the drain pipes. These are perfect breeding environments for fruit and drain flies. There are also holes in the walls in this area, including around plumbing conduits into and out of wall below handsink.
      • Corrective Action(s): Continue to target pest breeding environments on daily basis.
      • Plug holes in walls as possible measure to reduce fly access to breeding opportunities within the wall structure that can't be observed.

  6. Routine Inspection

    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: A) Minor fruit fly population noted in dishpit. General sanitation in this area pretty good, except for floor drain under sinks. Noted flies coming out of this area.
      • B) Significant fruit fly population observed at and around smoothie machine, behind smoothie machine at floor drains, and around adjacent handsink (under sink basin). Also noted to a lesser degree around floor of ice maker, possibly coming from floor drain/conduit under ice machine.
      • Corrective Action(s): Take apart and thoroughly clean the smoothie machine. Thoroughly clean grated floor drain behind smoothie machine, the floor drain under dishpit sinks, and implement fly control strategies to these environments as discussed. Discuss with Pest Control technician for addition advice for control purposes. Clean equipment and surrounding areas in a more aggressive manner as discussed to help reduce potential feeding and breeding opportunities until fly population is eliminated or significantly reduced.
      • **Keep in mind the breeding cycle of fruit and drain flies is quick, often two to three days so control efforts must be daily.
