      • Observation: Osbserved some food debris accumulations in areas in the facility. These include:
      • - small beverage syrup spill as this station;
      • - floor of walk-in cooler, and trolley (bottom shelf) in same unit;
      • - Floor along wall and around legs below dish sink unit;
      • **Area around mop sink in back of store is improved from previous inspection. Minor biomat formation around base of mop sink and under washing machine.
      • Corrective Action(s): Make sure staff are performing complete cleaning of kitchen throughout day and at designated cleaning times.,

      • Observation: Floor below triple sinks in back and around mop sink observed with biomat film along the edges of this space. Cluttered with cardboard box and mouse trap. This film is indicitive of longstanding stagnant puddles of water that is nutrient enriched. A good food for flies or other pests.
      • Corrective Action(s): Please keep clutter under the sink to a minimum, and nothing that easily decomposed like cardboard. Also, make sure staff move and replace traps to ensure cleanliness and good pest control practices when cleaning and mopping. Make sure cleaning and mopping includes and active step in drying this space to ensure no water ponds for extended time.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: walk-in cooler floor under shelving and beneath eggs observed dirty.
      • Area arouind back mop and dishsink observed with puddling water. Water extending beneath some dry food storage pallets in the same area. Noticed water ponding and stagnating in corners of this area and in the tile grout lines.
      • **Also noted the mop bucket only squeezes nominal amount of water out of mop head. THis results in the mop head picking up limited amounts of water. When the mop heads are left to hang a significant amount of water drips from mop head into reservoir and potentially onto floor.
      • Corrective Action(s): Clean floor in walk-in cooler as discussed.
      • Improve mopping the area around the mop sink and floor grout by twisting the mop inside the squeezer several revolutions to remove more water and improve function.
