- Observation (CORRECTED DURING INSPECTION): The chilli in the hot holding unit was measured at 50 deg C at the time of inspection, this item was noted to still be within the 2 hour time period.
- Other items in the hot holding unit measured at temperatures of 60 deg C. The chilli item was placed in metal and than plastic container, this could possibly be causing issues with the heat being distributed to the items in the plastic containers. Staff to add water in the container and also increase temperatures of the unit.
- Corrective Action(s): Corrected During Inspection (CDI): Operator was instructed to reheat the item to 74 deg C as it was still within the 2 hour time period and place in the now increased heat hot holding unit. This was completed and operator to monitor the hot holding temeperatures and log these.
