    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer was tested and measured at 0 ppm. This was tested using Quats sanitizer testing strips. This was based on the label and what the staff had show for the auto dispenser used onsite.
      • If surfaces are not adequately clean and than sanitized this poses a serious risk of cross contamination of pathogens to food items. All food contact surfaces must be cleaned and sanitized.
      • Corrective Action(s): Corrected During Inspection: The staff were instructed to reformulate the solution, new solution was poured in to the spray bottle and this measured 0 ppm. The staff were not fully sure if the auto dispenser was working correctly or had the sanitizer solution. EHO instructed the staff to use the labelled "Quats" sanitizer auto dispenser instead. The was measured at 200ppm Quats. Staff instructed to use this unit for the sanitizer fill up.
      • For the other unit if used ensure this is labelled and is calibrated for 200ppm Quats.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: The baking equipment such as the moffat - large machine for the buns, etc and large mixer machine were observed to be requiring a deep clean and sanitizing. There was build up of dried bread.
      • Proper cleaning and sanitizing of the equipment prevents pathogen growth and cross contamination risk.
      • Corrective Action(s): This and any other equipment must be cleaned and sanitized. Staff mentioned that nightly baking staff are responsible for this. Follow up regarding this will be conducted, date provided in main page information. If cleaned and sanitized provide a photo for verification, in addition EHO will come onsite to verify.

      • Observation (CORRECTED DURING INSPECTION): The front handwashing sation (the only designated handwashing sink) was completely blocked and inaccessible due to racks of bread trays.
      • -The front handwashing station was out of paper towels.
      • Corrective Action(s): Handwashing station must be supplied with soap, paper twoel, cold/hot running water and in adequate location to ensure convenient access to all employees.

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation (CORRECTED DURING INSPECTION): Observed a puddle of water in front of the 2-compartment sink. Next to a tray rack of clean utensils.
      • Observed a mop bucket filled with dirty water and the mop stored next to food contact surface table and trays of ready-to-eat bread.

      • Observation (CORRECTED DURING INSPECTION): Two cans of red pepper strips were severely dented and being stored with the other cans to be used.
      • Corrective Action(s): Discarded.

      • Observation: 1. Back storage area observed to have food debris under the shelving.
      • 2. Sticky build up inside double door cooler.
      • Corrective Action(s): 1. Please ensure all the shelves and items are pulled away from the wall to completely sweep out the debris.
      • 2. Please thorughly wipe down the inside of the coolers and the containers inside.
