      • Observation:
      • The high temperature dishwasher was unable to fill, wash, and sanitize dishes correctly. There is only a 2-compartment sink for warewashing, which is inadequate for manuel dishwashing. At time of the inspection, manager called a company to come and fix the dishwasher.
      • Corrective Action(s):
      • Immediately stop the processing and distributing of food from the kitchen, until the dishwasher has been fixed.
      • Sale of prepackaged foods can only occur.
      • Contact our office for a follow-up inspection, once the dishwasher is fixed and operating as per the manufacturer's specifications.

      • Observation:
      • Accumulation of food and grease under the deep fryers and kitchen assembly cooler. This will attract pests.
      • Corrective Action(s):
      • Clean up the food and grease in the mentioned areas. Train staff to clean these areas EVERY night before leaving.

      • Observation:
      • The high temperature dishwasher was not able to fill, wash and sanitize dishes. Dishes are unable to be cleaned and sanitized correctly to eliminate germs.
      • Corrective Action(s):
      • Immediately stop using the dishwasher and call a company to repair the machine, so that it runs as per manufacturer's specifications. The rinse cycle must reach or exceed 180F, at the manifold, to sanitize dishes properly.

    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation:
      • - Aluminum foil covers the shelves in the Pepsi cooler and the shelf on the wall, above the meat slicer. Foil is not durable or cleanable, this will attract and harbor pests.
      • - The inside walls and ceiling of the keg walk-in-cooler are unsealed wood. The wood is not sealed or cleanable.
      • Corrective Action(s):
      • - Aluminum foil covering surfaces MUST be changed at the end of each night. The surfaces shall be washed and new aluminum foil can be placed on the surfaces in the morning. If this is not done, do NOT cover with aluminum foil.

      • - Paint and seal the walls and ceiling inside the keg walk-in-cooler with a light color, so they are easily cleanable and do not absorb spilt food and liquids.

      • Observation:
      • The following areas are damaged:
      • - Wood shelves and cupboards under the front bar are water damaged. They are no longer sealed or cleanable, this will attract pests (flies and mice).
      • - The kitchen Pepsi cooler doors do not slide easily and do not seal tightly, sponge/foam has been installed to block the openings around the doors. Sponge/foam is not sealed or cleanable.
      • - Glasswasher has pooling chemicals under it. This could indicate there is a leak or problems with the machine.
      • - Glasswasher conveyor is not working and it is not moving the glasses through the machine.
      • Corrective Action(s):
      • - Replace all damaged wood shelves and cupboards under the front bar with a material that is durable, smooth, level, sealed and cleanable.

      • - Replace the doors and door seals on the kitchen Pepsi cooler they easily slide open & close, and tightly seal in the cold air.
      • **Correction date: Aug. 1/25**
      • - Immediately stop using the glasswasher and using the kitchen dishwasher to wash & sanitize dishes. Repair the conveyor belt so it moves glasses through the mache as per manufacture's specifications. Service the glasswasher to ensure there are no leaks in the chemical dispensing lines and pumps.

      • Observation: 1) Debris and a few mouse droppings observed on the floor underneath the counter of the bar.
      • 2) Deep fryer debris and oil observed on the floor underneath the fixed deep fryer units.
      • Corrective Action(s): *Thoroughly clean and sanitize the affected areas.
      • *Use a long-handled bristle brush to scrub the floor surfaces underneath the deep fryer.

      • Observation (CORRECTED DURING INSPECTION): Observed a build-up of biofilm in the water recirculation area of the ice machine. Ice machine currently cleaned once every three months.
      • Corrective Action(s): Ensure ice machine is cleaned often enough to prevent biofilm growth. Cleaning of ice machine started during inspection.

      • Observation (CORRECTED DURING INSPECTION): Raw and par cooked meat stored in covered containers above ready to eat foods. All raw meat must be stored separate and or under all other foods to help prevent cross contamination of food.

      • Observation: Mouse droppings observed in several areas in premise including (but not limited to): behind dishwasher, walk in bar cooler, shelving under bar area. Also observed bait boxes in the bar area again, pest control company continues to place and service these as seen in their reports.
      • Corrective Action(s): 1) Do a deep clean of premise as outlined earlier in report, including in the bar walk in cooler
      • 2) Have pest control company remove and switch out bait boxes for a mechanical type trap.
      • 3) Seal up hole in corner of wall to the bottom right of the bar walk in cooler door.

      • Observation: Build up of dust and debris observed in multiple areas around kitchen (including but not limited to): behind dishwasher (completed during inspection), behind the counter with food prep sink, between the deep fryers, shelving under bar counter (completed during inspection).
      • Corrective Action(s): Do a deep clean of premise removing all dirt/debris/grease build-up on equipment, floors and walls.
      • Due: 3 weeks.

      • Observation: Lighting in main food prep area as well as in the line cooking area was quite low and more than one bulb in each ballast was either missing or burnt out. Direct food preparation areas must have 540lux of light and the food prep area in the back only had 30lux.
      • Corrective Action(s): Replace burnt out/missing bulbs, repairing ballasts as needed to ensure that there is sufficient light in all of these areas.

      • Observation (CORRECTED DURING INSPECTION): Bar glass washer had no detectable chlorine sanitizer. Bottle was mostly empty and remaining chlorine was very pale (indicating the active ingredient has largely evaporated).
      • Corrective Action(s): Bottle switched out during inspection with a new bottle. Recommend putting a cap or seal over the opening of the bottle that is in use to slow the evaporation of the hypochlorite.

      • Observation (CORRECTED DURING INSPECTION): Rodent bait observed being placed by pest control company in bar cooler. Have these removed as the rodenticide could be tracked from the boxes by the rodents to nearby beer cans/bottles and possibly be consumed by customer.
      • Corrective Action(s): Bait boxes removed from areas of concern during inspection.

      • Observation: Several holes or gaps in wood counter top around the draft tower (left from preexisting draft tower according to staff) that have absorbed water and expanded. One area in counter top wood was exposed and is chipping off onto counter below.
      • Corrective Action(s): Replace counter or repair these holes (ex by installing a stainless steel sheet) or otherwise seal up these areas with a durable easily cleanable material to prevent further water damage to wood and prevent any wood from chipping off.

      • Observation:
      • 1) Accumulation of food debris under equipment and prep tables in the cookline area and under cooking equipment. This will attract pests.
      • 2) Accumulation of grease on the floor under and behind the deep fryers, and accumulation found on the sides between the deep fryers and flat top. This will attract pests.
      • 3) Old rodent droppings and food crumbs found along the base of all walls (beer cooler, dry storage, kitchen) and under equipment, tables, and sinks. This will harbor pests and it makes it difficult to determine if there is an active pest problem.
      • Corrective Action(s):
      • Pull all items and equipment away from walls and clean the floor under these items and along the base of walls. Increase the frequency this is being done. Inform the pest company where you are seeing new droppings.

      • The line cooler, across from the grill, has a door that doesn't tightly close. Cold air is continuously leaking out and food will not be kept cold enough.

      • Repair or replace the cold door so that it can easily close, tightly and keep the cold air in.

      • Observation:
      • There is an opening around an electrical outlet in the dry storage room which could be an entry point into the premises. Droppings found in the dry storage room around the computer and the cords.
      • Corrective Action(s):
      • Block all openings and holes in walls and around electrical outlets and pipes to prevent entry of pests.

      • Observation:
      • Rodent bait boxes placed in food processing and storage areas of the premises. Bait boxes contain poison which is a chemical that could get in food.
      • Corrective Action(s):
      • Immediately remove and discontinue using chemcial/bait methods to eliminate the rodents. Only mechanical means (snap trap, catch-all-traps, glueboards) shall be used in food storage and preparation areas.

      • Observation:
      • There are unused, broken or excess items (equipment, speakers, containers, etc) being stored on the premises. These items are never moved or cleaned, which will harbor/encourage pests to remain or live around these items.

      • Remove or discard all unused, borken or excess items from the premises immediately. This will eliminate hiding areas and will allow and mke it easier for all areas to be cleaned.

      • Observation (CORRECTED DURING INSPECTION):
      • A few mice droppings found in dry food storage area. Operator is aware of issue and increased visits by pest control company. Pest company has placed more traps around the facility.
      • Corrective Action(s):
      • Clean up the droppings and sanitize the area, and place open packaged of food in closed containers. Keep the pest control company in to rid of mice. Block and or repair all holes in walls, and around pipes (water & electrical) to prevent the entry. Detailed cleaning of all surface, food containers, and wire racks to remove food debris. During the inspection, staff cleaned and sanitized the areas, and discarded food.

      • Observation:
      • The door gaskets on the cooler bar doors are broken and the doors can't close tightly. This allows cold air to leak out, and the compressor on the cooler to constantly work.

      • Replace all gaskets on the bar doors with new ones so the door can close tightly.

      • Observation:
      • The high temperature dishwasher had a rinse cycle temperature of 72C(at manifold) and 68C at the plate's surface as per max/min thermometer. The rinse cycle temperature shall be at least 82C (at manifold) and above 71C at the plate's surface to kill germs.
      • Corrective Action(s):
      • Immediately call a repair person in to fix the dishwasher and to increase the rinse cycle temperature to above 82C (at manifold). Facility has ability to manually sanitize dishes with Quats sanitizer in sink. Inform staff that once dishes have run through the dishwasher, have them soaked in Quats sanitizer for 2 minutes and then air dried.
      • Contact our office to schedule a follow-up inspection to ensure the dishwasher is fixed.
