- Observation (CORRECTED DURING INSPECTION): 1) No detectable chlorine residual in the low-temp dishwasher at onset of inspection. Sanitizer supply bucket was recently changed out, but the sanitizer feed tubing wasn't correctly submerged in the sanitizer liquid, resulting in the dishwasher pump only pumping air during the rinse cycle.
- 2) Low quats sanitizer concentration in the spray bottles (ie. <200ppm).
- Corrective Action(s): 1) Remind all kitchen staff on correct maintenance procedures for the dishwashing machine. Whenever the dishwasher chemical(s) are changed, the feed tubing must be fully-submersed in the liquid. After installing the new sanitizer pail, the feed pump must be primed to purge air from the line. Confirm by holding the primer switch until a steady stream of liquid is observed being dispensed into the dishwasher.
- 2) Replace sanitizer solution in all of the sanitizer spray bottles with fresh solution
- Ensure to run the dispenser for several seconds before initially filling the spray bottles to ensure chemical concentrate is reaching the solution.

- Corrective Action(s): 1) Switch out mesh for a finer mesh that mice cannot fit through 1cm x 1cm or finer that still allows for adequate air flow through so temperature of side used for kitchen is not impacted. - 2) Numerous gaps around piping in lower cabinets in bar area and mouse droppings noted in some of the cabinets. Plug up these holes with a rodent proof material (ex wire mesh, steel wool or spray foam with rodent deterrent) Consult with pest control company as needed.
- 3) Ground level risers on floor in walk-in cooler (along wall with raw meat storage) are hollow and with mouse activity noted in the walk in cooler in this area, this can provide a place for them to hide.
