      • Observation (CORRECTED DURING INSPECTION): Bar area - lime wedges, diced fruit in the condiment tray were stored at room temperature without ice
      • Corrective Action(s): operator filled up the condiment tray with ice, please ensure always keep protential hazardous foods at 4C or less

      • Observation (CORRECTED DURING INSPECTION): Three of the four dishwashers (downstair dishwasher, downstair glasswasher, upstair low temperature dishwasher) had no chlorine/iodine residuals on the plate surface
      • Corrective Action(s): - Operator prepare a bus pan of santizier for sanitizing step, Ecolab was on-site fixing the dishwashers during inspection
      • - any big equipment that does not fit in the bus pan, please wash them in the high temperature dishwasher upstairs
      • - dishwasher log shows no record on the dishwasher chemicals residuals (test strips available), please ensure to test and monitor the dishwashers twice a day and record.

      • 2. do not store knives between the gap, store in a designated clean area
