      • Observation (CORRECTED DURING INSPECTION):
      • Minor mice droppings found on the lowest shelves in the dry storage room, and on the floor along the base of walls under shelving racks in the dry storage room. Dropping and mice carry diseases that could contaminate food.
      • Corrective Action(s):
      • Clean up the droppings, and wash and sanitize all surfaces that came into contact with the droppings. Inform your pest control company of the activity in the storage room. Have morning staff inspect these areas prior to starting food production. If droppings are found, have them cleaned up and sanitze surfaces that came into contact with the droppings. During the inspection, staff removed the droppings, and clean and sanitized the surfaces.

      • Observation: A small number of mouse droppings observed on floors near wall coving in the pantry/dry storage area and main kitchen
      • Corrective Action(s): *Remove the mouse droppings, clean & sanitize the floors in areas where mouse droppings are present.
      • *Monitor the affected areas for signs of new rodent activity after cleaning
      • *Report any new rodent activity to the pest control technician for further action, as necessary.

      • Observation (CORRECTED DURING INSPECTION): One sanitizer bottle in assisted living servery had no detectable residual sanitizer left. Sanitizer in bottle degrades over time and sanitizer must be refreshed regularly.
      • Corrective Action(s): Sanitizer bottle changed out during inspection for a fresh one. Sanitizer dispenser was dispensing at 200ppm. Have sanitizer bottles changed on a regular basis to ensure that the concentration remains at least 200ppm.

      • Observation (CORRECTED DURING INSPECTION): Mouse droppings observed in the dry storage room (in corner with flour in plastic bins). One mouse observed in snap trap under shelving unit. Monthly pest control service done by Ecolab.
      • Corrective Action(s): Clean out mouse droppings and remove dead mouse. Notify pest control company of mouse activity and continue to monitor for new mouse activity in this area daily, cleaning up any new droppings that may appear and discard any contaminated food (if found). Due: today.
      • Email most copy of most recent inspection to undersigned EHO when found. Business card provided.

      • Observation (CORRECTED DURING INSPECTION):
      • Found expired chocolate milk and yogurt in the walk-in-cooler, not stored in the "returns" section of the cooler. Consumption of expired foods could make people ill.
      • Corrective Action(s):
      • Immediately discard the food, or move to the appropriate storage area of the cooler. At time of the inspection, the manager moved the expired foods to the "returns" shelf of the cooler.

      • Observation:
      • 1) The exhaust canopies in the main kitchen has minor accumulation of grease and dust on the filters and canopy. The service sticker indicates the last time it was cleaned was September 2019. This could attract pests.
      • 2) The ceiling tiles in the dishwashing room have accumulated dust on them, especially around the air diffusers. The dust could fall on clean dishes.
      • Corrective Action(s):
      • 1) Call a professional company to clean the exhaust canopy and filters.

      • 2) Immediately clean the ceiling tiles in the dishwashing room. Increase the frequency at which the ceiling tiles are cleaned.

      • Observation:
      • The dishwasher had steam escaping from the unit and the dishwashing room is very humid. The exhaust vents in the dishwasher was not drawing the steam up and out, the vents may not be operating correctly. The excessive moisture in the room may promote mould growth and harbor pests.
      • Corrective Action(s):
      • Have the dishwasher's exhaust vents service to ensure they are operating as per manufacture's specifications.

      • Observation:
      • There are holes and other damage to walls in the servery room. The walls are more difficult to clean and may be entry points for pests.
      • Corrective Action(s):
      • Repair all holes, peeling paint, and any other damages to walls in the servery so the walls are smooth, durables, painted, sealed, level, and cleanable.

      • Observation:
      • The exhaust canopy filters have accumulated dust on them. This dust could fall into food and contaminate it. The exhaust canopy and filters are commercially cleaned yearly, with no maintenance between these cleaning.
      • Corrective Action(s):
      • Remove the exhaust filters and clean them to remove the accumulated dust. Increase the frequency (more than once a year) which the exhaust system is cleaned, or have on-site staff remove and clean the filters between commercial cleaning.

      • Observation:
      • The handwashing sink by the "Kitchen Vegetable Freezer" does NOT have any running hot water exiting the faucet. Only cold water exits the hot water faucet. In order to wash hands properly, staff require warm to hot water to do this. A second handwashing sink is present and stocked in the middle of the kitchen.
      • Corrective Action(s):
      • Contract a plumber to fix the problem and ensure running hot water exits the faucet, when the hot water tap is turned on.

      • Observation:
      • 1) Dust accumulated on the ceiling tiles and along the upper walls near air diffusers. The dust may fall into food and contaminate it. Operator is aware of the excess dust accumulation, which is due to the recent renovations and improvements to the facility.
      • 2) Minimal accumulation of food on walls behind and below equipment, prep tables and sinks; and on legs of equipment, prep tables and sinks. This will attract pests.
      • 3) Minimal accumulation of of food and water on the undersides of sinks and prep tables. This will attract and harbor pests.
      • Corrective Action(s):
      • 1) Clean the walls and ceiling tiles to remove the dust, ensure this is being done on a regular basis. If dust accumulated quickly, then increasing the frequency of cleaning may be needed. A company will be completing a detailed cleaning of the facility, as renovations have completed.
      • 2) Clean and remove the accumulation food and water from the walls and legs with hot water and soap on a DAILY basis, and sanitize after.
      • 3) Scrub and clean the undersides of sinks and prep tables with hot water and soap on a regular basis, and sanitize after. Add this to your Cleaning Schedule.

      • Observation (CORRECTED DURING INSPECTION):
      • Found plastic measuring jugs that had cracks and heat damage to them. The jugs are no longer cleanable as bacteria will live in the cracks.
      • Corrective Action(s):
      • Immediately throw away any cracked, chipped or damaged food equipment, container, and/or lid. During the inspection, the operator discarded the damaged jugs and replaced them with new ones.

      • Observation:
      • 1) Various taps (hot & cold) and faucets, in the main kitchen, drip water even when the water is turned off. Constantly dripping water will attract pests.
      • 2) The plastic lids on the large, mobile food containers storing dry goods (pasta, rice, flour, etc.) are cracked. Pieces of plastic could fall into the foods and the lids are not cleanable as bacteria hide in the cracks.
      • Corrective Action(s):
      • 1) Repair or replace all taps or faucets that leak/drip water to prevent the attraction of pests (drain flies). There shall be no dripping/leaking water from any tap, faucet, sink, or pipe.

      • 2) Inspect all plastic food container and lids for cracks and/or chips. Discard all damaged items and replace with new ones.

      • Observation:
      • Various walls in various areas of the main kitchen, serveries, food storage areas, and hallways (in food processing areas) are chipped and have peeling paint. The drywall is exposed and will absorb food debris and water, and is not cleanable. This will attract pests if walls can not be cleaned properly. This violation was mentioned in the past inspection and has not been corrected.
      • Corrective Action(s):
      • Inspect all walls and corners in all kitchens, serveries, and hallways in food processing areas for damage (pull equipment, tables, shelves, trollies away from walls during inspection). Repair all damage walls so they are durable, level, smooth, sealed, of light color, and cleanable.
