      • Observation: Exhaust ventilation over the cooking burners is overdue for service. Service tag indicates "next service due 2024-July-02".
      • Oil and dust residue visible on the exhaust filters.
      • Corrective Action(s): Contact a service technician to clean and service the commercial exhaust vents.

    • 401 - Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation (CORRECTED DURING INSPECTION): Tap at sole hand washing station in production room had a green hose attached to it. Staff cannot freely and properly wash both hands at the same time using a hand activated nozzle. Owner stated this hose is used to clean equipment and fill measuring cups with water to use in products. Green hoses tend not to be food grade, owner stated that he did not know if it was food grade or not when purchased.
      • Corrective Action(s): 1) Keep tap/spout free of any attachments to allow staff to access to sink and wash their hands as often as they need to. Hose disconnected during inspection.
      • 2) Replace hose with a hose that is labelled as food grade (commonly are white in colour or clear with white woven fiber). Due: June 11, 2024 (1 week)
      • 3) Have a separate hose bib/connection plumbed in (not a splitter attached to tap/shout) along fresh water line to allow staff to use hose for food production while at the same time keeping the hand washing station unobstructed. Due: June 19, 2024 (2 weeks)

      • Observation (CORRECTED DURING INSPECTION): Only handwashing station in dough rolling/assembly area had a long hose attached to end of tap making it unusable for staff to properly wash their hands. Hose removed during inspection.
      • Corrective Action(s): - Install a second hose connection for use of cleaning large equipment. Due: 2 weeks
      • - Keep all hand wash stations free and clear at all times. Hose disconnected during inspection.

    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Observed mouse nesting material in the spice storage area next to a piece of equipment in storage. Mouse droppings found in behind packaging material at entrance of premise. Some traps noted throughout premise.
      • Corrective Action(s): Do a deep clean of premise as noted in other violation, also removing all nesting material. Due: Dec 8, 2023

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Large amount of flour observed coating many surfaces including (but not limited to): cords, exposed piping, shelves, etc in dough room. Significant build-up of flour observed in behind tables and equipment that is not easily moved.
      • Corrective Action(s): Do a complete and thorough cleaning of premise removing all built up flour dust and food debris. Due: Dec 8, 2023

      • Observation (CORRECTED DURING INSPECTION): Two pieces of equipment made of up taped together meat forks or plastic forked spoons. These cannot be easily cleaned and could contaminate food with pieces of material that were breaking off of them.
      • Corrective Action(s): Tools/equipment of concern discarded during inspection. All tools and equipment must be make of durable, food grade, easily cleanable material.

      • Observation: Light above stove is out creating a darker work space.

      • Observation: Platform under dough press constructed of raw wood. Raw wood is porous and absorbent and cannot be easily cleaned. This correction was noted at last inspection.
      • Corrective Action(s): Seal or otherwise make easily cleanable to prevent build-up of dust/debris. Correction due by Nov 28, 2022. Email photos of finished/sealed platform to undersigned inspector on/before due date.

      • Submit an updated floor plan to reflect the changes, and to obtain health approval.
