      • Observation (CORRECTED DURING INSPECTION):
      • Maritime and Sage section, both domestic dishwashers were NOT set on the "Sani-Rinse" cycle. The "Sanitizing" option in the Rinse cycle MUST be selected to kill bacteria. The duration/time the dishwasher runs does NOT determine if the dishes are sanitized.
      • Corrective Action(s):
      • Retrain staff to ensure they are selecting the "Sani-Rinse" setting during the rinse cycle so dishes are being sanitized. During the inspection, staff were informed of this, but a formal training session or instructions shall be provided.

      • Observation:
      • The dishwasher, in the Sage kitchen, had medical tape on the front door, staff unsure why the tape is there. Tape is not food grade nor cleanable.
      • Corrective Action(s):
      • Immediately remove the tape and clean the dishwasher door. Repair or replace any damaged parts of the dishwasher so that it operates as per manufacturer's specification.

      • 311 - Premises not maintained as per approved plans [s. 6(1)(b)]
      • Observation:
      • Walls in the kitchens were found be chipped, exposing drywall. Exposed drywall is not cleanable and will absorb food and water, which will attract pests.
      • Corrective Action(s):
      • Inspect walls and make repairs to all damaged areas. The walls shall be durable, smooth, level, sealed, light colored, and cleanable.
