- Cooked meat found at room temperature during inspection. Operator indicated the meat was shaved off of the donair, then placed in hot holding. When ordered, it is cooked, then served. This is the correct method for preparing and serving donair meat.Please ensure that meat is placed in hot holding immediately after being shaved. Operator returned meat to hot holding during inspection.
