      • A knife and empty ketchup bottle were in the front hand sink; ensure the hand sink always remains empty and available for hand washing. Items removed during inspection.

      • There was an opened can of tomato paste in the walk-in cooler being used to store tomato paste. Operator immediately discarded of the can.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • A cloth was sitting on the prep counter. Do not leave used cloths on food contact surfaces. If cloths are used, they must be stored in sanitizer when not in use. We discussed single use paper towel with the spray instead. Cloth was move during inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The prep cooler was a few degrees warm during the inspection, which occurred just after lunch. Cook and owner were told to monitor the temperature to ensure it returned to ≤4.0°C, and if it does not to move high risk foods to the walk-in cooler.
