- Observation (CORRECTED DURING INSPECTION): Vinegar and salt solution used as a food contact surface sanitizer in spray bottle. This is not an approved food contact surface sanitizer.
- Corrective Action(s): Do not use vinegar and salt solution as a food contact surface sanitizer. QUATs (red) solution available. Staff poured out spray bottle contents and refilled it with QUATs solution registering at 200 ppm. Test strips available (expiry 2027). Ensure there is food contact surface sanitizer before beginning food preparation.

- Observation (CORRECTED DURING INSPECTION): Kitchen received new food inventory today and some bags of basmati rice were placed on the grease trap next to the cleaning chemicals. This area is contaminated and cannot be used to store food.
- Corrective Action(s): Ensure to store food products in designated food storage areas. The grease trap and chemical storage areas may pose a contamination risk even for packaged foods. Operator moved new inventory back onto food shelves.

- Observation (CORRECTED DURING INSPECTION): This is a repeat infraction and reoccuring issue.
- QUAT sanitizer dispensing unit does not consistency to create required 200 to 400 ppm sanitizing solution. The right concentratoin of sanitizer is required to prevent food contamination and prevent spread of disease. Some of the QUAT solution inventory is from 04/22/2021 and is expired. Operator was able to manually tilt unit so 200 ppm QUAT sanitizer can be achieved.
- Corrective Action(s): Ensure unit can dispense 200 to 400 ppm QUAT sanitizer in solutions created. Replace unit if needed or use a different inventory. Discard any expired sanitizer solution. Manual dilution of QUAT sanitizer is acceptable if automatic dispenser is broken. Check solution every day ensure it is the right concentration.

- Corrective Action(s): Ensure the food grade sanitizer bottle is the right solution QUATS at 200 to 400 ppm. Test and log daily chemical sanitizer. Ensure all chemical bottles are accurately labelled. Correction required today.

- Corrective Action(s): Repair or replace this unit to ensure 200 to 400 ppm Quat sanitizer can be dispensed consistently. In the mean time use 100 to 200 ppm chlorine solution to sanitize food contact surfaces. Correction required in 1 week.
