- Observation: dishwasher not able to get dishes to 71 C. Indicating guage showed in excess of 180 F, but only reached 65 C at plate when measured. This will not kill the germs on plates.
- Corrective Action(s): Manual sanitizing needed. Use dish sink at 100 ppm (1.5 onces bleach to 2 gallons water). Use test strips.
- This will be checked at re-inspection date noted on report.

- Observation: Cupboard to the right of the dishwasher deteriorated, and allowing the growth of mould in this area. Dried food products stored in this area at risk of contamination.
- Corrective Action(s): Immediately remove any food from this cupboard. Place in alternate storage area as discussed.
- Replace this cupboard or remove and leave as open flexible space. Make sure redesign accounts for warm moist air migrating onto new structures built.
- Discussed with operator and plan in place for repacement during winter break. OK.
