- 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
- Observation: Observed paper used as liner in the front end of the kitchen. Materials like paper will absorb juices and allow disease causing bacteria to grow. Proper materials and finishing is required to ensure adequate cleaning and sanitizing.
- Corrective Action: Refinish surfaces to provide a durable easy to clean surface (e.g. corrugated plastic).
- 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
- Observation: Inadequate sanitizing rinse solution. No sanitizer detected. Automatic dish washers must provide a minimum of 100 ppm during a boil water notice. White foam remaining on equipment after dish washing cycle ends.
- Corrective Action: Operator to ensure that sanitizer dispensed in dishwasher is active and no foam residue remains after cycle is complete. Operator stated they soak equipment and utensils in bleach solution prior to running through dishwasher. Operator to ensure that chlorine solution for soaking is at 200 ppm.
