- Cooler used for condiments, water and cheese is operating at 8 degrees Celsius. Turnover on cheese is quick for poutines and not stored in the prep cooler overnight. Coolers must operate at 4 C or less. Gravy measured 54 degrees Celsius. Hot holding must be maintained at 60 C or above. Temperature was turned up.

- Generator used to provide electricity to the food truck is not adequate for the truck's full operation. The hand sink pump is shut off to prevent tripping the breaker. Hand sink must be operational at all times.

- Fridges could not be turned on to check temperatures. The unit needs an electrical plug-in adapter.

- Water sample has not been submitted. Water could not be checked since the mobile needs an electrical adapter so it can be plugged in to the electrical to allow the pump to work.

- Windows do not have fly screens. Install fly screens or slider windows to protect against flies entering food truck.

- The mobile unit is brand new and is in the process of being set up. Food equipment is not set up or mounted, such as shelves in the fridge, dishrack above the sink and fry cutter mounted to wall. Finish putting everything in place and then clean and sanitize all surfaces. Finish writing up a cleaning schedule.
