- **The salad cooler at the front service area was at 13C and there were no temperature records. A staff stated that it was due to frequent opening during the busy lunch time.- All other refrigerator units maintained safe food temperatures- Food on hot holding units kept above 60CACTION REQUIRED:1) Monitor the temperature of the salad cooler and ensure that it is capable of maintaining a temperature of 4C or colder. If the temperature of the cooler is not decreasing after lunch time, all the salad in the cooler shall be transferred into another cooler2) Maintain daily temperature logs of all refrigerator units. A temperature log sheet is attached to this report for this purpose.
