Used wiping cloths must be stored in a sanitizer solution between uses, and dirty cloths awaiting cleaning must be kept in a designated storage bin for soiled linens.

      • An accumulation of dust/dirt was observed on the two ventilation canopies in the main food preparation area. These must be thoroughly cleaned to maintain a sanitary environment.

Ensure that the indicated sink is repaired to restore proper drainage.2. Ensure that the gaps are sealed to be smooth, resistant to moisture and easy to clean.
