      • The glasswasher was professionally cleaned recently and no signs of visible mold was noted during the inspection. The unit was equipped with detergent and an iodine concentration of 12.5ppmThe kitchen mechanical dishwasher was equipped with detergent, rinse and 0ppm of chlorine was detected. Please repair or replace unit. In the interim, operator was to perform manual sanitizing using the two compartment sink.

      • The exterior back door had a gap at the bottom. Please repair or replace door.

      • An unlabeled chemical bottle was observed in the food service area. Staff noted that it was a sanitizer, and respective labelling was added to the container.

      • The dishwasher sanitizing cycle distributed a chlorine concentration of 0ppm. ** Ensure the dishwasher can supply chlorine concentration of 100ppm. ** In the meantime, manually supply sufficient chlorine to the dishwasher. Test strips should be used to monitor the concentration.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Open poison for pest control purposes was observed in the backroom (storing a meat slicer). ** Have approved pest control features in the facility (contained traps). Please note that only qualified pest control officers are permitted to handle open poison in food facilities.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Accumulation of debris was observed on shelving located in the walk-in cooler. ** Conduct deep cleaning and sanitation of the area listed above.
