- Observation: 1) Some build-up of grease and food debris observed in harder to reach areas as well as some older mouse droppings under the bar sinks.
- 2) Observed a bait box for rodents with some bait spilled outside of box.
- Corrective Action(s): 1) Give kitchen and bar area a detailed clean removing all grease and food debris to further discourage pests
- 2) Have bait box removed and ensure that bait is only used on the exterior of the building, not inside.

Hot holding units are not designed to reheat food and are not able to reheat food fast enough. Reheating must be done as quick as reasonably possible in an oven or similar type unit.

- Observation (CORRECTED DURING INSPECTION): Container of garlic butter found stored at room temperature at grill area. Garlic butter made with whole fresh garlic cloves that are crushed on site.
- Corrective Action(s): Using fresh garlic that has not been acidified and mixed in with margarine/butter poses a risk of botulism. Recommend switching to a jarred pre-crushed fresh garlic that has an acid added to it if this butter is going to be stored at room temperature for any length of time.

- 1) The exhaust canopy filters have accumulated grease and dust on it. The dust can fall into food and contaminate it, and the grease can attract pests.
- 2) The aluminum foil cover shelves and catch trays (beneath the charbroiler) have accumulated grease and food on it. This will attract pests.

- 1) Wash and sanitized the filters to remove the grease and dust. The owner explained that this is done every Monday.

- Accumulated food and grease found, which will attract and harbor pests. The areas oberserved were:
- - Interior walls and mechanisms of the ice machine in the bar area.
- - Small spot on the floor under the flat grill in the kitchen.
- - Underside of the shelf above the deep fryers in the kitchen.
- - Floor under the shelving unit storing pop syrup in the dishwashing area.

- Scrub and clean these areas with hot water and soap, rinse with clean hot water, and then sanitize on a daily basis. Turn the ice machine off and empty all the ice out first, before cleaning.

- Plastic lids, coverind bus pans of food, were cracked. Cracks allow bacteria to grow in them, and pieces of plastic may fall into the food.

- Immediately throw away any cracked, chipped or melted lids and cover with saran wrap, foil, or lids that are in good shape. Purchase new lids to replace the damaged ones. At time of inspection, the manager discarded the damaged lids and used stainless steel lids to cover the food.

- Yearly permit fees have not been paid this year and the premises doesn't have a valid decal. Outstanding permit fee letter given to owner. Owner indicated that they mailed a cheque for the fees last month.

- Pay the outstanding permit fees of $250. Payment must be received within 10 working days or further enforcement will occur such as issuance of fines and/or closure of the premises. During the inspection, owner provided a cheque (#005789) for $250 for the fees.

- A cloth rag is being used to soak up grease from the grill. This is a fire hazard and the cloth is NOT cleanable.

- Immediately stop the use of cloth towels to catch or soak up grease. A stainless steel catch tray or container must be used to gather the grease and emptied & washed each night. At time of the inspection, the cloth was removed.

- These areas will attract pests as a source of food (#1 and #2). Additionally, the grease and tinfoil are fire hazards. The unsanitary rag on the bathroom door knob (#3) will contaminate clean hands. Repair the doorknob.
