      • Observation: Mahicheh (lamb shank) menu item is not being cooled in a sufficient manner to ensure that the food temperature is cooled to 4 degrees Celsius (or lower) within a maximum period of 6 hours. Employees are transferring large batches of the cooked mahicheh to invidual single-service plastic containers, cooling at ambient (room) temperature for 3 hours with lids-on, then transferring them to refrigerators for the remainder of the cooling process.
      • Corrective Action(s): Current cooling practices are insuffiicent to ensure foods are rapidly cooled within 6 hours total cooling time (2 hours to reduce temperature from 60 Celsius to 20 Celsius, then 4 additional hours to cool from 20 Celsius to 4 Celsius).
      • *Adjust cooling practices to ensure all cooked menu items are rapidly cooled for storage in the refrigerators.
      • *Recommendation: Obtain an additional freezer unit to use to rapidly-cool cooked menu items, prior to transferring to refrigerators. Use of a freezer unit will substantially-reduce the cooling time, ensuring that the foods can be rapidly-cooled within 6 hrs.

      • Observation (CORRECTED DURING INSPECTION): Large batches of food such as stew are not being cooled from 60 Celsius to 4 Celsius within the maximum allowed cooling time of 6 hours or less.
      • Corrective Action(s): *Obtain ice wands (cooling wands) to rapidly cool large batches of foods such as soups and stews
      • *Portion foods into smaller containers to assist with the cooling process
      • *Monitor temperatures of foods to ensure they are cooled within 6 hours maximum cooling time

      • Observation: Chlorine sanitizer solution exceeds the maximum concentration limit of 200ppm for usage as a no-rinse sanitizer on food contact surfaces.

      • Observation (CORRECTED DURING INSPECTION): Found a box of whole cucumbers and several bags of whole lemons stored with boxes of meat above and next to them.
      • Corrective Action(s): Always store raw meat separate and/or below all other foods, including whole fruit and vegetables to reduce the chance of cross contamination. **This is a repeat infraction** Talk to all staff and remind them of the requirement and ensure that they follow it at all times. Continued violations of this nature may result in increased enforcement such as a ticket ($345 fine per violation).

      • Observation (CORRECTED DURING INSPECTION): Two line coolers along back wall (closest to back door) measured at 18-20C. These *must* be at 4C or less at all times if they are going to be used for food storage. Staff stated that the coolers were all served as required during last inspection but receipts unavailable during inspection. Thermometers have been purchased as required in last inspection and were present in each cooler. **Monitor these temperatures daily and do not use cooler if it is not at or below 4C**
      • Corrective Action(s): Only raw food still sealed from producer stored in these units and product moved during inspection to alternate working cooler.
      • **Have these units adjusted/repaired today and do not use them until they can consistently maintain proper temperature***
      • **Have copy of receipts for repairs available for inspection tomorrow or email them to the undersigned EHO for review**

      • Observation: In upright cooler (same cooler as noted in last inspection for same violation) lemons were observed stored below raw meat.
      • Corrective Action(s): All meat must be stored below/separate from all other foods. Move immediately.

      • Observation: Original screen door in place during inspection however a significant number of flies observed throughout kitchen area.
      • Corrective Action(s): Set up traps (not above food areas) and remove flies to prevent them from landing on and contaminating food and food contact surfaces. Due: 2 days

      • Observation: Three door cooler under the two deep fryers measured 9C and cooler next to dry storage shelving (closest to the back door) measured 8C. Both contained raw meats that were intended to be cooked.
      • Corrective Action(s): Move all product from these coolers and store in an alternate cooler. Adjust/repair coolers so that they can maintain 4C or less at all times. Due: Tomorrow (August 22, 2023)

      • Observation: Screen door at back of restaurant was open and appeared to be broken (top rail for screen to slide on was missing). Several flies observed around the kitchen area.
      • Corrective Action(s): Replace screen door so that it can be easily and quickly used by staff. Ensure this screen door stays closed at all times to limit pest entry. Due: August 25, 2023

      • Observation: Food/grease/debris build up observed under/behind most fixtures (coolers, freezers, dry storage shelving, etc). Some mouse droppings observed as well (possibly old).
      • Corrective Action(s): Give restaurant a deep clean, removing all food/grease/debris from under and behind all units. Due: August 25, 2023

      • Observation: Several coolers did not have thermometers in them to monitor the temperatures.

      • Observation (CORRECTED DURING INSPECTION): Main hand wash station in the back area was blocked again with the black cart. The more barriers there are to hand washing, the less likely that staff are to wash their hands when they need to.
      • Corrective Action(s): Keep this area clear at all times so staff can wash their hands whenever they need to without having to move it first.

      • Observation (CORRECTED DURING INSPECTION): Main hand washing station blocked with a garbage can at start of inspection. Garbage can moved during inspection.
      • Corrective Action(s): Keep the hand wash station available and clear at all times.

    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Significant number of mouse droppings found in rice/onion storage area as well as along the floor where the floor meets the wall though most of the kitchen area.
      • Also found a box containing rodenticide in the corner near the rice storage. Bait/rodenticide cannot be used inside the restaurant because it could contaminate the food if mice touch it then go touch food.
      • Corrective Action(s): Bait box moved outside during inspection.
      • Clean under and behind all equipment and shelves in the kitchen area, removing all mouse droppings and clean and sanitize the areas. Strongly recommend having mechanical traps set to catch the mice. Correction due by: Monday Feb 13, 2023.

      • Observation: Observed gap under back door and light coming through. This could allow the entry of mice.
      • Corrective Action(s): Install weather stripping that is also rodent proof. No light should be seen under the door. Correction due by Monday Feb 13, 2023

      • Observation: Bleach sanitizer spray bottles very strong (bleached out paper test strip). Bottles also did not have any label on them, this was found in the last inspection.
      • Corrective Action(s): Label the spray bottles as "sanitizer" and also put on the mixing instructions for how to make the sanitizer (1 teaspoon bleach in 1 Litre water). Due: Tomorrow (Feb 10, 2023).

      • Observation (CORRECTED DURING INSPECTION): Hot holding unit with stew in main grill area was around 50-55C, this must be 60C or above at all times.
      • Corrective Action(s): Unit was turned up and lids were put on food in hot holding unit during inspection.

      • Observation: No paper towel found in dispenser in employee washroom.
      • Corrective Action(s): Ensure that all hand wash stations are fully stocked with hot and cold running water, liquid soap and paper towel at all times. Paper towel restocked during inspection.

      • Observation: Screen at back door was open and is also broken making it difficult for staff to keep closed.
      • Corrective Action(s): Screen door closed during inspection. Replace/repair screen door so it is quick and easy to use so staff are able to keep it closed easily. Due: 1 week.

      • Observation: Spray bottles with sanitizer had no label.
      • Corrective Action(s): Ensure that all chemical bottles are labelled for quick and accurate identification. Also recommend writing mixing instructions for sanitizer on bottle (2mL bleach in 1L water).
