- Observation (CORRECTED DURING INSPECTION): Quats sanitizer dispenser in washroom was not dispensing any sanitizer at the start of inspection. Even after the bottle was switched out it only got to around 100ppm when it must be at least 200ppm. Second quats dispenser at three compartment sink was dispensing quats sanitizer at 200ppm. *This is a repeat concern from last routine inspection
- Corrective Action(s): Use the dispenser from three compartment sink until the dispenser in the washroom is checked by supply company. Test strips were available on site however no daily monitoring of sanitizer (or freezers or coolers) is being done.
- **Start daily monitoring and recording of both santizing stations and all temperature controlled units. Keep records on site for review at next inspection.

- Observation (CORRECTED DURING INSPECTION): Spray bottle labelled as "Pink" that was identified by staff as a sanitizer had no detectable level of sanitizer. The chemical in the dispensing unit which staff stated they get the spray from also had a detergent (good - this is needed as grease build-up can happen very quick with raw meats) but the manufacturer's instructions clearly state that the product must be rinsed after application to prevent cross contamination.
- Corrective Action(s): Ensure a 200ppm concentration of sanitizer and that staff rinse product off after it has been applied.

- Observation (CORRECTED DURING INSPECTION):
- The quats sanitizer in spray bottles was below 200ppm, and cloth towels are being stored on counter tops. Low strength sanitizer will not kill germs, and cloth towels will allow germs to grow on it.
- Corrective Action(s):
- Immediately change all the sanitizer in spray bottles with new sanitizer solution. A new solution must be used each day.
- Immediately place all cloth towels into a bucket of sanitizer when not in use. Change the sanitizer solution every 2-4 hours with new solution. The towels must be fully submerged in the sanitizer.
- During the inspection, new sanitizer was placed in spray bottles and cloths were placed in buckets of sanitizer.

- Observation:
- 1) Staff food is being stored beside or with store foods in the deli walk-in-cooler. There is a potential that staff food may contaminate store foods.
- 2) Ready to eat (RTE) foods (baked goods), in the deli/meat walk-in-freezer, were being stored beside or beneath raw proteins. This is unsafe as raw juices (if freezer breaks down) may drip onto the RTE foods

- 1) Re-arrange the cooler so staff food have a designated shelf or area to store their food, which is separate and/or away from store food. Put a sign on the shelf indicating where staff shall store their foods.

- Accumulated food and debris was found in various areas of the facility, this will attract pests. The following areas were found to have food and debris:
- - underside of the 3-comp. sinks; the legs of the 3-comp. sink; the pipes under the 3-comp. sink; and the wall beneath the 3-comp. sink
- - the metal shelving racks, in the main walk-in-cooler, storing the marinating meats; and the floor of the main walk-in-cooler
- - the lower shelves/cupboards in the raw meat service area
- - the exhaust filters of the exhaust canopy had dust on it
- - the floor of the deli/meat walk-in-freezer
- Corrective Action(s):
- Wash the mentioned areas with hot water and soap, rinse/wipe down with clean hot water, and then spray with sanitizer. Increase the frequency all these areas are cleaned.

- The 3-compartment sink has leaking waste pipes. Water is pooling on the floor and there is a cloth towel tied around the pipe. Pests will be attracted to the pooling water, and the cloth towel is not an acceptable method to stop a leak. In past inspections, the sink and/or the pipes have been found to be leaking. If this continues, replacement of the whole 3-compartment sink unit will be required.

- Remove the cloth towel, and mop up the pooled water. Immediately call a certified plumber to fix or replace the leaking pipes.

- The 3rd sink, in the manually 3-compartment sink, leaks and staff are not able to fill it with sanitizer to soak (2 minutes) and sanitize dishware. This is NOT acceptable as bacteria will survive on the dishes and can be passed to customers.
- Corrective Action(s):
- Immediately repair or replace the broken parts of the 3-compartment sink so that it doesn't leak and basins can be filled, so proper manually dishwashing can be done. Have staff fill one sink with soapy hot water to wash and another sink with sanitizer. The broken sink shall be used to rinse soapy water off until it is fixed. Failure to fix the problem by the assigned date will result in the issuance or orders, tickets, fines, and or closure.

- Observation (CORRECTED DURING INSPECTION):
- 1) An open can of pepperoni sticks (for sale) was found at the front cashier area. The pepperoni is exposed to contaminates (sneezing, coughing, touching etc.).
- 2) Food sampling of salsa (in a communal container) and chips (on a large plate); and cut cheese and sausage (on a large plate w/ little to no toothpicks) is being incorrectly. The samples can be contaminated by the public touching other samples, and the samples are exposed to temperature abuse.
- Corrective Action(s):
- 1) Remore the can of pepperoni sticks so the public has no access. Or, place the pepperoni in a covered case or inividually wrap the pepperoni. The pepperoni was removed from the cash register area.
- 2) Put out minimal amounts of samples to prevent temperature abuse (enough to be consumed within 1 hour); each food item must have its own toothpick or disposable cup; and no large or bulk containers of sauces shall be offered for personal dipping. Retrain staff on the correct methods of sampling.

- The following areas were found to have accumulated food debris, sauces and grease on them:
- 1) On the floor around, between, and behind boxes on the floor, and on shelves.
- 2) Tables legs, wire racks, and the tracks for sliding cooler doors.
- 3) Walls in food preparation areas.
- 4) Handles on doors, coolers, sinks, and drain levers.
- Corrective Action(s):
- Immediately clean these areas and increase the frequency at which these areas are being done. To properly clean surfaces a soap/degreaser must be used first to remove food and grease, then a sanitizer (pick solution) shall be used after to kill the germs. A sanitizer isn't a soap/degreaser, it is a chemical that only kills germs.
