- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- The mechanical dishwasher was connected to a pail with detergent designed for manual dishwashing. The label read "manual warewash detergent." The product was inappropriate for the mechanical unit. The maximum hot water temperature reached after several runs was 57C. The unit was connected to a rinse agent. A compartment and a single compartment sink were available and equipped with dish detergent and bleach. Operator was instructed to manually wash following the three step dishwashing method in the interim. The mechanical unit must be connected to the appropriate chemicals and reach a minimum of 71C at the dish level.
