      • Observation: 1. Observed old, dried debris inside/outside of the dough flattener, including the surface below the machine.
      • 2. Observed numerous utensils stored in between equipments (between the wall and the cooler, between a cart and a sandwich cooler).
      • Corrective Action(s): 1. Disassemble, clean, sanitize. Maintain according to the sanitation plan. To be corrected within 3 days.

      • Corrective Action(s): 1. Re-arrange to prevent contamination. Corrected during inspection.

      • Observation (CORRECTED DURING INSPECTION): Dishasher had 0ppm chlorine at the plate surface, inspector tested three times
      • Corrective Action(s): Diversey was onsite during the inspection, dishwasher had a final rinse of 100ppm chlorine at the plate surface, please do not underestimate the importance of test strips, ensure to test the concentration daily and record it on the dishwasher log

      • Corrective Action(s): - Please clean and sanitize the ice machine, ensure to clean it at least once a month
