- 1) There was grease/debris/food/sauce accumulation on the cooking equipment, under the cooking line, hard to reach areas (baseboards/wall grime), etc. -thoroughly clean the equipment in the kitchen and ensure they are moved to clean under/behind the equipment.2) Coolers, cooler doors, tracks and handles were dirty with debris/sauce/food.-clean the coolers3) The exhaust vent hoods were dirty with grease.-clean the hood vents on a regular basis (weekly/bi-weekly)4) Stove top was wrapped in tinfoil-remove the tinfoil; clean the equipment. Tinfoil is not permitted as it's not a durable/washable surface.5) The booths in the dining area were deteriorated/ripped/worn.-the booths are scheduled for repairs in the upcoming months -- thanks
