- There was raw/unfinished plywood on the wall, in the washroom (near the sink).-fix the wall/finish the plywood -- all surfaces must be smooth, durable, and non-absorbent (paint the plywood).
- 23. Is the facility maintained in a clean and sanitary condition?
- 1) The handles of the pizza prep cooler were dirty with accumulation of food/sauce/grease, etc.-ensure all frequently touched surfaces where food handling occurs are cleaned and sanitized frequently throughout the day as this is a cross-contamination concern.2) There was debris/food/dirt accumulation under prep tables/behind pizza production line. -move tables and line coolers to thoroughly clean floors/walls, etc.
