- Operator diluted the chlorine bleach with more water until the concentration was measured to be 100-200 ppm.

- 4) Large container of cooked egg noodles and prepared chicken in frying batter was stored on top of the sinks in the kitchen
- Cook covered all the containers with a lid/saran wrap and placed the containers of prepared food in the cooler at 4C

- Observation (CORRECTED DURING INSPECTION): Tub of noodles observed stored at room temperature. Internal temperature measured at 12C. Operator stated that they took it out of the cooler a few minutes ago and will cook it within the hour. Based on observations, noodles has been out for more than a few minutes.
- Corrective Action(s): Instructed operator to cook it now or return noodles to the cooler. Do not store potentially hazardous foods at room temperature without time tracking. Operator put the noodles back in the cooler. Take noodles out as needed for cooking.

- Observation (CORRECTED DURING INSPECTION): Spray bottle of sanitizer measured 0ppm of chlorine (bar/drinks area). Instructed operator to remix the bleach sanitizer.
- No santizer observed in kitchen area.
- Corrective Action(s): Bleach sanitizer mixed to 200ppm once instructed.
- Bucket of bleach sanitizer was mixed for the kitchen once instructed.

- Operator understands that food must be covered when not in use.

- 2. Handles of scoops must not be touching the food to prevent contamination. Since scoop observed is handleless, we do not know where the scoops are being handled. Please use a scoop with handles or store scoop away from food.

- Observation (CORRECTED DURING INSPECTION): Observed pre-cooked bucket of chicken wings at room temperature; measured temperature to be at 11-14 C. Operator put away the product into a cooler once inspector walked into the kitchen.

- Observation (CORRECTED DURING INSPECTION): 1. No sanitizer prepared at time of inspection
- 2. Observed knives and wooden cutting block being washed, but no sanitizing step.
- Corrective Action(s): Ensure sanitizer is prepared at all times. Also ensure there is a separate sanitizer for the front area and tables, and a separate sanitizer for the kitchen area.
- Sanitizer solution = 1 tbsp bleach, 4 L water.
- Do not mix soap and bleach together.
- Operator prepared sanitizer for the front and kitchen to 100ppm Cl at time of inspection.
- 2. You must sanitized your dishes, equipment, cutting boards, etc after every washing.
- Wooden cutting boards - use a 200ppm (2 tbsp for 4L water) chlorine solution and spray onto board. Be sure to soak the cutting board.

- 2. Canned foods must be trasnferred to a container with a lid once opened.
- 3. Do not leave bowls in bulk bins - only scoops with a handle, stored handle up.

- All foods (except whole eggs) that were stored in tofu containers were discarded at time of inspection.
- Further observations of tofu containers being re-used for food storage will result in a correction order and/or violation ticket.
