- Observation (CORRECTED DURING INSPECTION): Slicer (used for veggies only) had debris build up on inner ring area, the operator stated that there is an issue with removing the blade so clean in place procedures were being followed. At the time of the inspection sanitized cloth was used to clean and sanitize this. Was at the time of the inspection observed as clean.
- Corrected During Inspection : At the time of inspection the operator was told ensure that this is always cleaned and sanitized. If not in sanitary condition this unit will be required to be replaced or removed from service.

- Observation (CORRECTED DURING INSPECTION): Top portion of prep cooler mesaured ~7-8C ambient temperature. Potentially hazardous foods in the top portion of the prep cooler probed around 6.4C. Items were placed into the cooler less than 2 hours ago.
- Corrective Action(s): Operator reduced the amount of food in inserts (moved to another working cooler) and will use up the remaining foods within 2 hours.
