- Corrective Action(s): please remove all items from the mop sink, and ensure mop sink is always accessible for dumping mop water (not to the floor drain)

- Observation: Washroom door was observed open and not closed at the time of the inspection. As this opens in the kitchen area this must be closed, the install of self closing mechanism is required.
- Corrective Actions:
- - Self closing door mechanism (e.g. hinges, door hydraulics, etc) must be installed to ensure that this door is kept closed. This is to prevent any cross contamination risk.

- Observation (CORRECTED DURING INSPECTION): Cooked pizza observed in display cabinet that is not hot held.
- No active time tracking observed.
- Corrective Action(s): Staff stated that they discard pizzas after two hours and that they remember the time.
- Active time tracking MUST be completed. Expiry time must be written down to ensure pizzas are time/temperature abused.
- Staff noted the times for all pizza on display.
- If time tracking is not observed during the next inspection, all cooked pizzas will be discarded.

- Observation (CORRECTED DURING INSPECTION): No sanitizer at the beginning of the inspection.
- Corrective Action(s): Instructed staff that sanitizer MUST be present at all times when facility is operating.
- Staff went out to buy bottle of bleach to mix beach water sanitizer in the spray bottle for 200ppm chlorine.

- Observation: Excessive flour accumulation observed in the gap between the walk in cooler and the wall.
- Excessive flour and grime along the back lower shelf of the table holding the sheeter.
- High touch surfaces (cooler handles) sticky and have dried grime on it.
- Corrective Action(s): Please deep clean and sanitize the kitchen and ensure routine deep cleaning is maintained.
