- Observation (CORRECTED DURING INSPECTION): 1. Container of chopped garlic with spices observed left at room temperature.
- 2. Walk in cooler ambient temperature fluctuates between 6.0-7.2C -> walk in cooler managed to reach lowest 4.4C by the end of inspection
- Bucket of yogurt probed at 7.1C
- Bucket of curry at 6.7C

- Corrective Action(s): 1. Container of garlic spices placed back into the prep cooler.
- 2. Call in technician to ensure cooler reads 4C and below. If temperatures continue to increase, remove all potentially hazardous food into a different cooler.

- Observation (CORRECTED DURING INSPECTION): 1. Multipurpose cleaner used to clean/sanitize dining tables.
- 2. In use utensils kept in a water bath that is not kept cold with ice or hot held. Water bath observed murky. Staff stated they only keep utensils during the lunch/dinner rush when there is lots of orders. Inspection started at 2:30pm, no order observed from the beginning of the inspection and yet the staff did not wash and sanitize the utensils.

- 4. Potato chopper observed to have grime dried onto it.
- 5. Knives on magnet strip observed to be greasy not properly washed/sanitized before placing back onto the magnet strip.
- Corrective Action(s): 1. Mr.Clean multipurpose cleaner is not food grade. Bleach water sanitizer at 200ppm for all food contact surfaces.
- 2. In use utensils can be held in a cold (ice) water bath or a hot water bath (hot holding), or washed and sanitized between each use. Staff discarded the water bath and washed and sanitized the utensils.

- 5. Please ensure only clean and sanitized knives are placed on the magnet strip to ensure strip is kept in a sanitary manner.

- 2. Container used as scoop kept in the hot holding unit of rice. No handle.
- 3. Ice machine observed to have mildew growth.
- Corrective Action(s): 1. Always cover food that is not actively in use or cooling.
- 2. A scoop must have handle and the handle must not touch the food when stored in the container with the food. Acquire a scoop for the rice.

- Surface temperature reads 6C, ice still observed.

- Staff placed the frozen meat back in the cooler.

- Observation (CORRECTED DURING INSPECTION): Back door observed open and back storage oberserved with food debris along the floor/wall joint that will attract pests.
- Corrective Action(s): Do not keep the back door open unless it has a screen to prevent pests from entering.
- Staff to keep the back door close.

- Observation: 1. Grease and grime observed accumulated along the cookline under and behind the stove/friers
- 2. Grease and grime accumulation on the sides of the friers and stove.
- 3. Food debris and flour observed on the dry storage shelving.
- 4. High touch surfaces like cooler and shelving handles and the area around the handles observed to be very sticky with dried up grime.
- 5. Cutting board observed to be highly discoloured.
- 6. Most prep surfaces observed to be greasy and sticky as if degreaser has not be used to clean before sanitizing surfaces.
- 7. Shelving/racks in the walk in cooler and coolers observed to be grimy with dried up accumulation of food/sauces
- Corrective Action(s): Maintaining cleanliness and sanitation is priority in a kitchen. Please deep clean and sanitize the kitchen.

- Corrective Action(s): The operator moved all cold potentially hazardous foods (cooked rice, cream, and yogurt) to other coolers, non-perishable foods (whole cucumber, whole cauliflower, whole peppers) can remain in place.
