    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: Standing fridge doors, coffee makers and blenders are discolored with stains. Cutting board has discolored knife marks. (Public Health significance) - Discolored knife mark and stains may indicate the presence of bacterial biofilm, which may contaminate foods. Stains on the fridge door may cross contaminate food through touching.
      • Corrective Action: Operator to clean and sanitize all food contact surfaces and equipment. Operator to ensure cutting board's surface is clean, sanitary and smooth.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Dirt found on the floor. (Public Health Significance) - dirt may contain pathogens. Unsanitary condition can increase the chance of food contamination.
      • Corrective Action: Operator to ensure the premises are clean and sanitary at all times.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: The metal rack in dry storage area is greasy. (Public Health significance) - grease may contain pathogens that can contaminate foods.
      • Corrective Action: Operator to clean and disinfect the metal rack. Operator to keep all the shelves and racks clean and sanitary at all times.
    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Shelves in dry storage area is not smooth. Paint is peeled off. (Public Health Significance) - smooth and finished surface facilitate cleaning and sanitation.
      • Corrective Action: Operator to ensure all surfaces in food premises are smooth and non-absorbent at all times.
