      • Observation: The arrangement in some parts of the kitchen are different to the proposed floor plan. (Public Health Significance) - a change of kitchen arrangement may disrupt the unidirectional flow of food, potentially increasing the risk of cross contamination.
      • Corrective Action: Operator to update the floor plan and submit to Northern Health for consideration.
    • 211 - Frozen potentially hazardous food stored/displayed above -18 °C. [s. 14(3)]
      • Observation: (CORRECTED DURING INSPECTION) The temperature of the walk-in freezer was above 0 degree Celsius. (Public Health significance) - freezers must be able to maintain an internal temperature of -18C or colder to keep foods frozen, preventing the growth of pathogens such as Listeria.
      • Corrective Action: Operator to ensure the walk-in freezer can maintain an internal temperature of -18C or colder.

      • Observation: Permit was not placed in a conspicuous location as per the regulation.
      • Corrective Action: Operator to put the permit in a conspicuous location which is easily visible to the customers.
    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: Knife marks with discoloration were found on the surface of sandwich cutting boards. (Public Health significance) - knife marks can trap food residues and are hard to clean and disinfect. Discoloration suggests the presence of bacterial biofilm that can contaminate foods, potentially causing foodborne illnesses. All food contact surfaces must be smooth and non-absorbent for effective cleaning and sanitation.
      • Corrective Action: Operator immediately flipped over one cutting boards with a smooth surface. Operator to stop using the cutting board with deep and discolored knife marks. Operator to re-surface the cutting boards.
