      • Clean dishes were left in the dishwashing sinks for drying. A separate designated area is required for clean dishes to dry so that the dishwashing sinks remain clear and there is less risk for cross contamination.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • An area rug was present on the kitchen flooring. Please ensure any floor mats are smooth and cleanable.

      • Cleaning cloths and sponges were observed in a container on the kitchen counter. Please ensure cleaning cloths and sponges are placed in a bleach solution to prevent bacterial growth.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The display on the hot holding / Meat thermometer was not visible. New thermometer or replacement battery required.
