    • 301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation (CORRECTED DURING INSPECTION): Vegetable dicer observed to have built-up of food debris along the top guards and blades. Manager informed that they did not use the vegetable dicer today.
      • Corrective Action(s): Clean and sanitize aformentioned item. When cleaning and sanitizer vegetable dicer ensure that the guard and the blades are dissembled prior to washing. Vegetable dicer must be washed and sanitized after each use or every 4 hours of continuous use which ever is lesser.

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): No prepared QUATs or chlorine sanitizer available at the back area of the kitchen. Observe staff to mix chlorine and detergent when asked to prepare sanitizer.
      • Corrective Action(s): Prepare chlorine sanitizer bucket measured between 100-200ppm chlorine or QUATs at 200ppm to sanitize food contact surfaces. Do not mix sanitizer with other chemicals, this can alter effectiveness of sanitation and detergent.
