    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Cleaning cloths were observed on food contact surfaces throughout the facility with no sanitizer residue detected in them/in buckets of sanitizing solution. - Ensure cleaning cloths are submerged in buckets of sanitizer solution at the correct concentration between use or have adequate sanitizing solution residue in them at all times during food processing to kill harmful microbes.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Tuna was observed to be thawing inside a drain-plugged food preparation sink with water.Ensure to use one of the following approved methods to thaw foods:- In the cooler ahead of time- Submerged under running cold water- During cooking - In the microwave, if being cooked or consumed immediately2. Frozen pork observed in two containers on a food preparation table opposite the food preparation sink.- Operator moved items to the walk-in cooler. Do not leave out at room temperature.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • A gap was observed under the bottom of the back/exit door.- Seal the gap or install an effective vermin proof (weatherstripping or a door sweep) to prevent entry of pest.

    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • There is a shelf of clean food equipment stored beside the two-compartment sink where it was being used to soak other containers. A dishwashing apron was also stored on the same shelf of the clean equipment. Clean utensils and food equipment must be stored in a manner that protects it from contamination. Install a barrier or move the shelf at least 1 meter away from the two-compartment sink.

    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The paper towel for the hand sink located by a freezer and grill were stored in an open top bin. Please store the paper towel in a proper dispenser to protect the paper towel from contamination.
