    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Raw chicken eggs (one flat, 30 eggs) were observed stored on a grocery shelf at an internal temperature of 16 °C. A staff member confirmed the eggs had been stored outside the cooler for more than four hours. The eggs were discarded. Raw chicken eggs must be stored at 7 °C or below at all times.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • There was no liquid hand soap or paper towels available at the back-of-house hand sink or the washroom handwashing sink. Staff were instructed to obtain liquid hand soap and paper towels immediately. In the interim, dishwashing liquid and single-use wiping cloths will be used until proper hand soap and paper towels are available.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • No pest control record was observed. Pest control measures and monitoring must be carried out, with records maintained at least once a month and available onsite for review.
