      • Observation: Dishwasher final rinse cycle registered 59 C, 62.4 and 63 C during three consecutive runs.
      • Corrective Action(s): Dishwasher must reach at least 71 degrees C a the dish surface or at least 180 F at the manifold during sanitizing rinse. Repair or adjust the dishwasher so that booster is working properly to boost the water to at least 180 degrees F for proper sanitizing.
      • In the mean time all utensils must be sanitizer manually by soaking in 200 ppm Quats sanitizer solution. (immediately)
