      • Observation: Noticed a flour beetle in one of the flour bins.
      • Corrective Action(s): Discard the entire bin as such immediately. Thoroughly clean and sanitize all bus pans, trays and ladels etc that has build up of flour. All flour, rice and grain products must be kept in bins with tight fitting lids at all times.
      • Clean and organize all shelves in the dry storage area and remove any items that are not in use

      • Observation: The inside plastic cover on the freezer lid is broken. This may expose the food products to insulation materials.
      • Corrective Action(s): All open food products were transferred to another freezer. Replce the plastic cover or purchase a new freezer to ensure all food products are stored in a safe manner ( Immediately)

      • Observation: Excessive dust build up noticed underneath and behind the upright freezer, deep freezers (located in dry storage) and all upright coolers in the kitchen area. Grease build up noticed on the small metal shelf next to the range.
      • Corrective Action(s): 1. Clean thorouhgly underneath and behind all coolers and freezers.
      • 2. Remove dust build up from compressors in all coolers
      • 3. Remove food spills from underenath the microwave.
      • 4. Clean the metal shelf and floor underneath the shelf to remove grease and oil build up. ( By April 15, 2018).

      • Observation: The countertop above the dishwasher is in poor shape and appears to be rotting.
      • Corrective Action(s): Replace the countertop with washable altenative such as stainless steel work table. Ensure to remove old caulking from behind
      • the triple sink and recaulk with silcone based caulk. ( By April 25, 2018). Replace any shelving that has deteriorated from moisture damage.
