      • Observation (CORRECTED DURING INSPECTION): Heavy build up of grease and dried soy sauce noticed on the white plastic cutting table on top of the preparation cooler.
      • Corrective Action(s): The plastic prep table/board must be removed every day for thorough scrubbing/cleaning in the sink and sanitizing with 100 ppm chlorine bleach solution. Clean/sanitize this prep table and all other chopping boards at least every 2-4 hours.
